Lindeman Island Resort is seeking an experienced and resilient Live-In Chef specialising in Chinese Cuisine to join our team on a full-time basis.
We require a culinary professional with a proven background in high-volume, remote kitchen operations—similar to those found on mine sites or remote camps. This is a unique opportunity to live and work in the beautiful Whitsundays while keeping our hard-working team energised with authentic, high-quality Chinese meals during the development of our exciting new resort.
Please note: This role is based on an active construction site, and the successful candidate must be comfortable and adaptable to working in these conditions.
High-Volume Chinese Catering: Plan, prepare, and execute hearty, authentic Chinese meals for a large workforce, confidently catering for at least 40 persons at a time.
Menu Planning & Preparation: Manage daily kitchen operations, ensuring high standards in wok cooking, roasting, steaming, and bulk meal prep to deliver varied and nutritious menus.
Stock Management: Oversee all aspects of inventory, including ordering, receiving, and storing specialist Asian ingredients, fresh produce, and dry goods in a remote location.
Adaptability: Creatively adjust menus and service models to accommodate the supply chain challenges and ingredient availability inherent in a remote island location.
Safety and Hygiene: Maintain strict adherence to all food safety and hygiene standards, ensuring the kitchen is kept exceptionally clean and compliant with regulations.
Team Leadership: Lead, direct, and mentor kitchen staff, including kitchen hands, to ensure smooth, coordinated, and efficient meal services.
Culinary Expertise: Strong, specialized skills in traditional and contemporary Chinese cuisine, with the ability to scale up recipes for bulk catering without losing authenticity or flavor.
Remote Experience: Proven experience as a chef in challenging remote locations (such as mine sites, remote camps, or offshore rigs), demonstrating the ability to cater for large groups daily.
Resilience: The physical and mental stamina to work long hours and handle the specific demands of a remote construction site environment.
Work Ethic: A proactive, "can-do" attitude with the ability to work both independently and as part of a small, dynamic team.
Flexibility: Must be willing to work a flexible roster, which includes early mornings, evenings, weekends, and public holidays, often on a split-shift basis.
Certifications: Relevant chef qualifications and a current Food Safety Supervisor certificate are highly regarded.
